Summer Salad of Melon, Feta, and Shrimp

Ingredients

  • 5 ounces mixed baby greens (about 8 cups)
    • 1/2 cup balsamic vinaigrette
    • 1/4 cantaloupe, skin removed and cut into 6-8 long strips
    • 1/4 honeydew, sking removed and cut into 6-8 long strips
    • 1/4 small round seedless watermelon, skin removed and cut into 6-8 triangles
    • 24 large poached shrimp (peeled and deveined)
    • 1/2 cup crumbled feta cheese
    • 3 scallions, thinly sliced
    • 1 lemon quartered

Directions

Gather these tools: cutting board, chef’s knife, dry and wet measuring cups, large mixing bowl, tongs

Dress the greens with the vinaigrette and arrange on a large platter.

Arrange the melon slices loosely atop the greens in alternating colors, then add the shrimp.

Serve immediately.

Ohhh the Fall Fashions

So I’ve been flipping through my magazines, checking out the fall fashions, and I’m so in love with it ALL!!! But from what i can see there are several trends that really stand out as being the most popular and in. So i’m going to run down the list of the fall fashions i could find.

  • ANIMAL PRINT ANIMAL PRINT ANIMAL PRINT!!!! In every shape and size. Shoes, skirts, jackets, accesories!! Whatever it all goes, just remember no matter how fashion forward, a little goes a long way.
  • Plaid. Like the animal print it comes in all shapes and sizes. Just dont Go crazy.
  • Vintage cropped leather jacket. It’s a staple for every girls closet.
  • Camel colored jacket. Says classic, but fashionista.
  • Wearing a shirt under your summery floral dress. Takes that flowy sun dress from summer to fall.

So ladies, take this info and run all the way to the mall.

Recipe for Empanadas

Ingredients

  • 1/2 cup butter, softened
  • 1 (3 ounce) package cream cheese
  • 1 cup sifted all-purpose flour
  • 1 cup fruit preserves
  • 1/3 cup white sugar
  • 1 teaspoon ground cinnamon

Directions

  1. DAY BEFORE: Cream butter and cream cheese together until smoothly blended. Beat in the flour. Shape dough into a smooth ball, wrap in foil or cling wrap, and refrigerate overnight or up to a week.
  2. AT BAKING TIME: Remove dough from refrigerator 30 minutes before using. Start heating oven to 375 degrees F (190 degrees C).
  3. Roll chilled dough thin. Cut with 3 or 4 inch round cookie cutter. Place small spoonful of jam in center of each round, moisten edges with water.
  4. Fold round over and press edges together. Bake on ungreased cookie sheet 15 to 20 minutes. Immediately roll in sugar mixed with cinnamon (traditional) OR in confectioners’ sugar if preferred

Great Summer Recipe

Grilled Tomato Melts

ingredients

    • 3 large tomatoes (about 8 oz. each) or a variety of smaller tomatoes (about 1-1/2 lb. total)
    • 4 ounces Monterey Jack cheese with jalapeno peppers or Monterey Jack cheese, shredded (1-1/2 cups)
    • 1 small green, yellow, purple, or red sweet pepper, finely chopped (about 1/2 cup)
    • 1/4 cup toasted sliced almonds

directions

for the oven

  • Preheat oven to 350 degree F.
  • Cut each tomato into 4 slices, about 1/2 inch thick. (If using smaller tomatoes, halve each one.)
  • For each of 4 servings, arrange 3 tomato slices, overlapping slightly, in a foil-lined, 15×10x1-inch baking pan. (Or, if using smaller tomatoes, arrange in a single layer in a foil-lined,15×10x1-inch baking pan.)
  • Sprinkle with shredded cheese, finely chopped pepper, and toasted almonds. Bake about 15 minutes or until cheese is bubbly.
  • Carefully lift with large metal spatula to individual plates, allowing excess juices to drain off.

For Grill preperation

  • Arrange ingredients as above in a shallow disposable foil pan.
  • In a grill with a cover arrange medium-hot coals around the edge of the grill;
  • test for medium heat above the center of the grill.
  • Place the pan with the tomatoes in the center of the grill rack.
  • Grill, covered, for 12 to 15 minutes or until cheese is bubbly. Makes 4 appetizer servings.

Make-Ahead Tip: Arrange tomatoe slices in baking pan and sprinkle with cheese, pepper, and nuts. Cover and chill up to 4 hours. Bake or grill as above.

You can easily prepare this dish ahead of time, then serve it straight from the oven or grill.

Is your Gyno missing something?

I know that some people may not believe this, or may not like to hear this but your Dr. doesn’t know everything. Well maybe that’s not the best way to put it. Ok so they may miss things, or overlook things, and hear are two of the most common diseases that your gyno may have overlooked.

The first one is PCOS or Polycystic Ovarian Syndrome. This is a hormonal imbalance in which an excess of male hormones are released into the body. Some symptoms are

  • Irregular Periods
  • Acne
  • Facial Hair Growth
  • Thinning Hair on Your Head
  • Stubborn Weight Gain
  • Skin Discoloration

Adolescents may see a problem with irregular periods, and a Dr. may put you on the Pill to to control it. This fixes the problem of the period however it doesn’t fix the problem as a whole. So most women don’t realize that the problem as a while exists until a few years down the road when they go off the pill to try to conceive, and find out that they can’t. You don’t need all of the symptoms to have this disease. In reality you should always tell your Dr. about all problems even if you think its no big deal.

The second diseas is Endometriosis or Endo. This condition causes the tissue that lines the uterus to grow on the outside and even spread to other organs such as the ovaries. Some symptoms include.

  • Servere mestrual cramps lasting 2 or more days.
  • Heavy clotted menstrual bleading
  • Diahrea or other digestive symptoms during the period.
  • Pain during sex

Always be specific and never understate the harshness of your pain when telling your Dr. The pill will help control the pain and stop the growth of the tissue. How ever surgery is one of the only ways to fix it, and some Dr.s will even recomend a hystorectomy.  There are other options. The best bet with anything is to do your research and talk to your Dr.

According to a poll done by newsweek magazine, your looks maybe more important then where you went to school.  No were not talking about how well groomed a person maybe, were talking about your level of hotness. I think that a lot of women will agree with me when i say that why does it matter if some tool thinks that we’re hot, as long as were good at our job? It shouldn’t and this is one rising trend that i thkn that we hope doesn’t last.

Eat fast food……Guilt Free

So many fast food restraunts are getting a bad rap these days, but some of them are actually offering some surprisingly healthy options.  So what items on the menu should you try next time your in a rush, here’s a little guide to keep you healthier.

1) Wendys Ultimate Chicken sandwich. With only 340 calories and 7 grams of fat it’s obvious why this sandwhich is a good choice.

2)Subway roast beef sub.  It only has 330 calories, and 4.5 grams of fat. Make it extra good buy loading it up with veggies and skipping the mayo.

3)Burger King Whopper Jr. It conta

ins 340 calories and 20 grams of fat.  The only downfall is that it contains 5 grams of saturated fat.

4)Taco Bell Grilled Soft Tacos.  It has 320 calories for 2 tacos, and 4.5 grams of fat. The soft taco shells have less fat than hard taco shells, just make sure that you skip the extra sour cream.

5)KFC honey BBQ sandwich.  Calories 310 and 3 grams of fat.

6)McDonalds Egg McMuffin.  Calories 300 and 12 grams of fat. The egg offers a great source of protein, and with only five grams of saturated fat, how can you go wrong?

7)Wendy’s Chili (Large). 330 Calories, and 10 grams of fat, 4 being saturated. It’s also a good source of calcium and fiber.

8)Pizza hut, 2 slices of thin and crispy pizza.  400 calories for 2 slices and 18 grams of fat. The thin crust means less flower in the crust which cuts fat, and allows you to get your favorite topping.

How evver you should stay away from the following

1)KFC Doubledown

2)McDonalds Angus Bacon and cheese

3) Pizza Hut meat lovers and stuffed crust.

Are you yawning all the time?

Well here’s what your body is trying to you. No matter how much sleep you think that your getting, you still may be sleep deprived. Waking often in the middle of the night can often cause this, Youb should definitely speak with  your physician  about ways to fix your sleeping habbits, but know this for now.You should always get 8 hours of uninterupted sleep everynight.
